Black Tiger shrimps get their name from
the black stripes on their shells and their huge size. Tigers
can grow to a maximum length of 363 millimeters but harvesting
size is 180 to 250 millimeters.
Black Tiger dominates the major global
share of shrimp products at 56% of the total world shrimp
production. They are farmed everywhere in Asia especially
Thailand, the main supplier of the world. Other main sources
of global supply are Ecuador, India, Indonesia, Bangladesh,
Vietnam.
Black Tiger shrimp has a mild and sweet
flavour. The cooked meat is firm and moist. Since the meat
is resilient , it can be cooked by various methods such as
broiled, grilled, sauteed and steamed. The cooking time depends
on how big the tigers are. Their thick shells can hold heat
and thus require less time to cook. Overcooking will turn
the texture tough.
